侍酒師火鉗(Port-Tong)
侍酒師火鉗(Port-Tong),又稱為波特酒火鉗,是指一種極其特殊的開瓶方式,它源自十八世紀的英國,因為英國人非常喜歡喝波特酒(Port Wine),尤其有錢的英國人特別喜愛珍藏老年份波特酒,但因為波特酒本身帶有高酒精和高甜度,因此在長時間的儲存後,軟木塞特別容易碎裂。若使用一般的開瓶器,總會導致軟木塞斷裂;因此出現了Port-Tong,它是利用加熱的金屬鉗,其末端帶有一對半環,可以在不打擾軟木塞的情況下直接切斷玻璃瓶頸。
開瓶流程需要先將金屬環加熱到炙熱通紅,接著套住葡萄酒瓶的頸部幾分鐘後,再利用低溫的冰毛刷或冰布巾覆蓋,由於溫度的突然極端變化,玻璃瓶頸會以柔和的叮噹聲乾淨俐落地破裂。
這是一種極具”儀式感”的開瓶方式,會讓賓客瞬間回到十八世紀歐洲上流社會餐飲經驗,即使那被開瓶的葡萄酒並非超過百年的老波特酒。

PORT TONGS
The Port Tongs, also known as Port Wine Tongs, are a unique method of opening bottles. They originated in 18th century England, where Port Wine was highly favored, especially among affluent individuals who enjoyed collecting vintage Port wines. However, due to the high alcohol and sweetness content of Port Wine, the corks were prone to becoming brittle over extended periods of storage. Using conventional bottle openers often resulted in cork breakage. Hence, Port Tongs were introduced. These tongs consist of heated metal with a pair of semi-circular ends, allowing for the direct cutting of the glass bottle neck without disturbing the cork.
The opening process involves heating the metal ends until they are red-hot, placing them around the neck of the wine bottle for a few minutes, and then covering it with a cold ice brush or cloth. The sudden extreme temperature change causes the glass bottle neck to cleanly and smoothly crack with a gentle clinking sound.
This method of opening has a profound sense of ceremony, instantly transporting guests back to the dining experiences of the European upper class in the 18th century, even when the wine being opened is not an over-century-old vintage Port.

LE SOMM, a professional wine consulting brand, searched for traditional Port Tongs in Portugal and the UK but found that many European Port Tongs had imperfect metal curve design and poor usability. Eventually, they discovered a Taiwanese blacksmith with over a century of experience in ironwork, who specializes in crafting exquisite Port Tongs for sommeliers and seasoned wine enthusiasts, enhancing the drinking experience for restaurant customers.
